So since the death of my brother - I won't lie - I haven't been feeling very inspired and have struggled to get back in the grove of things. Not using it as an excuse, but between the grieving process, the unexpected travel, catching up in the household, family coming to visit us, etc. I've just been sticking to our usual meals. But lately I got back on it with a few new recipes! -



Baked cod with garlic & herb ritz crumbs


So one thing to know - is that I try really hard to select recipes that have a low and practical ingredient list. I also try to find recipes that call for ingredients that I may already have in my fridge/freezer/pantry. For example - if I've got lemons going bad - what can we do to get those bad boys moving outta there before they go bad?! It's a starting point and so I'm not overspending or wasting food I already have. Welp, once we got back we assesed our freezer situation and found a few filets of cod and conveniently I came across Ina Gartens recipe AND I had all the needed ingredients! That never happens lol! I was excited to not have to do any special shopping for anything. This recipe was very straight forward and easy to follow! It was light and delicious and gave the very mild fish alot of flavor. I paired it with a simple side of sauteed zuchini to let the fish and its seasonings have the main stage for the dinner plate.

Provençal Zucchini Gratin


Clearly we're having a zucchini thing goin on & heavily into Ina Garten recipes!! This recipe I did have to shop for, but it sounded super yummy so I didn't mind! I love potato au gratin and so does my husband so I thought I'd give this a go! It was very yummy with practical ingredients minus the specific bread crumbs it called for (I had to just use regular ones - oops!), but would be a great dish to bring for Thanksgiving! This recipe to me did however tast very similar to a zucchini chicken casserole we do so that was a bit hard to shake, but overall not bad! We paired it with rotisserie chicken & I think that didn't help in seperating the difference between the casserole we usually have and this dish lol.

I'm still getting back in the grove of finding inspiration to cook different recipes. I have been cooking, but it hasn't been anything unique or new to share. I did get a new cookbook though and I'm hoping to make some yummy dishes out of that here soon! Stay tuned & as always - thanks for reading!
