If I haven't said it enough, I'll say it again- I do not like recipes with a TON of ingredients. Nothing frustrats me more than clicking on a "easy" recipe only to find out that there's a ton of different ingredients needed or weird items that you can't find anywhere. I'm lazy and suck at cooking. So when I say easy, I mean it! Now that I explained myself, lets get into this recipe!
My hubby & I, absolutely love Asian cuisine! Unfortunately though, it can be super unhealthy and leave you feeling crummy. So after much Pinterest searching-I came across a recipe where it showed "zoodles" being used instead of lo mein noodles. Lo Mein is one of my absolute favorites! I knew I had to at least attempt this recipe! When I clicked further into it though, I noticed this women had SEVERAL ingredients. She bought all her ingredients from an Asian market in Soho and made her own teriyaki sauce, blah blah blah. Not my style. So instead I took the general idea and ran with it my way.
What You'll Need:
-1 Chicken Breast
-Zucchini
-1 bottle Teriyaki Sauce (Of your choice!)
Cooking for me than two? Simply up the ingredients! A lot of the time I will make extra so I have lunch for work the next day!
Cooking Instructions:
Step 1. Spiralize your zucchini into noodles
(I use the cheap hand one & it works great!) https://www.amazon.com/dp/B00IIVRB3W/ref=cm_sw_r_cp_dp_T1_-PatzbCK15YG9
Step 2. In a medium size saute pan- place zucchini noodles & drizzle olive oil over them.
Step 3. Once noodles begin to soften, combine sliced chicken breasts (already cooked prior)
Step 4. Drizzle Teriyaki sauce over noodles & chicken.
Cook until hot & serve! Yup. It's that easy!
All ingredients can be purchased at Aldi! Hope you all give it a try! Let me know how it goes!
